Survival Food: Grow Your Own Greens

Southerners have long known that some of the most easily grown and nutritious vegetables are "greens" like kale and collards. Drive through the rural South even today and you'll find most people grow these leafy, vitamin-rich crops throughout the winter.

Even Yankees can enjoy fresh winter greens if they use a cold frame. You don't need to make it frost-proof because freezing temperatures won't kill collards and kale. Sub-freezing temps actually improve their flavor.

If you live where temperatures rarely drop below 20 degrees, just work the soil and plant your greens. If you're further north, then try this easy-and-cheap cold frame made out of PVC and clear plastic sheeting.
